Lazy Lahanodolmades

serves 4 to 6

            Lazy Lahanodolmades

  • ¼ head white cabbage, finely sliced
  • 1 lb ground beef
  • ½ white onion, chopped
  • 2 garlic cloves, minced
  • 3 tablespoons dill, chopped
  • 1 cup white rice such as Uncle Ben’s 
  • 1 cup tomato sauce 
  • 1 teaspoon tomato paste
  • 1 teaspoon salt
  • ¼ teaspoon ground black pepper
  • Pinch of cayenne pepper
  • Dash of Sriracha
  • ½ teaspoon ground cumin
  • 1 ⅓ cups water 
  • 1 teaspoon chicken bouillon
  • ½ lemon

            White Dill Sauce

  • 1 cup greek yogurt such as Fage
  • 1 tablespoon fresh chopped dill
  • 1 tablespoon lemon juice
  • pinch of salt
  • pinch of black pepper

Instant Pot: Add 3 tablespoons olive oil to your pot. Once hot, add the ground beef and saute until golden brown. Then add the onions and garlic. Saute for 2-3 minutes then add the chopped cabbage. Let cook for another 2-3 minutes. Add the rice, dill and stir it all until combined. Add the tomato sauce, sriracha and tomato paste. Mix well. Add the water, salt, black pepper, cumin and cayenne. Add the juice of 1/2 a lemon and you can add the lemon wedge for extra flavor. Lock and set to 8 minutes, rice setting. 

Stovetop: Repeat the same steps but use a pan or a braiser with a lid. Once you add all your ingredients and the liquid,  cover and cook for 15 minutes on low heat. Must be covered. The steam helps cook the rice evenly. Turn off heat and allow to sit for and additional 6 minutes covered.

Serve with a dalop of the White Dill Sauce! Enjoy!
