Ρόκα Σαλάτα με ρεβύθια 🌿Chickpea Salad with arugula 🥗Recipe below ⬇️

Ingredients
13.4 oz Garbanzo beans organic no salt added (ready to serve)
2 cups cherry tomatoes halves
1 garlic clove
2 basil leaves cut julienne
1/4 teaspoon Salt
1/4 teaspoon Black pepper
Pinch of cayenne
Feta cheese or Parmesan cheese
2 cups arugula

Preparation
Add a little bit of olive oil to your pan on low medium heat. Next add in the garlic with the cherry tomatoes and the chickpeas sauté for five minutes. Add the salt pepper cayenne. Add the basil turn off heat the chickpeas over your arugula. Add a little bit more olive oil and the juice of a half of a lemon . 🧑‍🍳Here’s how you can make it:
Ingredients
5 1/2 cups all purpose (approximately)
2 eggs
3 sticks unsalted butter (room temperature)
1/2 cup freshly squeezed orange juice
Zest of one orange 🍊
2 tablespoons mastic liquor
1 tablespoon ground mahlap
1 1/2 cups sugar
Pinch of salt
1/2 teaspoon baking soda
1 1/2 teaspoons baking powder
Egg wash (2 eggs and splash of milk)

Preparation
*Beat the butter with an electric mixer and add the sugar.
*Then add one egg at a time.
*In the meantime, add the baking soda to your orange juice and add to the mixture. *Add the orange zest, mahlap and mastic .
*Add a pinch of salt and baking powder.
*Turn off the mixer and add the flour in slowly mixing with your hand. You can use a wooden spoon as well.
*Let rest for 5-10 minutes. Then start forming your Easter cookies. Make any design you fancy.
*Brush the cookies with the egg wash. Optional (sprinkle some of the cookies with sesame seeds).

Mini Pistachio Galaktoboureko Parcels 🇬🇷
Recipe below 👇

Ingredients
• 5 cups whole milk
• 1 1/2 cups granulated sugar
• 1 cup semolina, fine
• 1 tablespoon vanilla extract
• 1/3 stick unsalted butter, cold
• 3 egg yolks room temperature
• 1 pinch salt
• 1/4 cup pistachio butter
• 1 teaspoon Ceylon cinnamon
• 1 phyllo pack # 7
• syrup (1 cup sugar, 1 cup water, 1/2 cup 🍯 honey)
*chopped pistachios

For the custard
In a pot, add the milk and sugar over medium heat until the milk comes to a boil.Add the semolina and stir with a hand whisk, until the cream thickens.Remove from the heat and add the vanilla extract, cold butter, and mix until the butter melts.Add the yolks, salt, pistachio butter and cinnamon. set aside the custard to cool.
Melt some butter in a bowl and unroll the defrosted phyllo pack carefully to not break the sheets. Cut the phyllo into equal squares. Place a damp towel so the phyllo doesn’t dry up! Brush your stainless steel muffin pan with butter. Next start your parcels, Add 4 phyllo sheets brushing butter in between . Add 1/4 cup of custard and then crinkle the sides inwards to seal the muffins. Repeat until all trays are full. Brush each parcel with melted butter and bake in the oven at 350 degrees F for about 40-45 minutes or until golden brown. Drizzle with syrup and add the chopped pistachios! This recipes makes about 36 parcels..Enjoy 😉
