Fava

serves 6-8

  • Greek yellow split peas, 20 oz bag
  • 1 medium white onion, chopped
  • 2 bay leaves
  • 1 celery stalk, cut as needed to fit in pot
  • 1 tbsp. diced red onion for garnish
  • 1 tbsp. salt
  • 4 cups water
  • 1 cup chicken stock
  • 1 garlic clove, minced

Check your split peas for any rocks or small sticks then rinse your split peas thoroughly under water. Add 2 tablespoons olive oil to your pot. 

Instant PotPress saute and add your chopped onions and garlic. Saute for 10 minutes. When onions are caramelized, add your split peas, celery stalk and bay leaves. Stir for 1 minute then press cancel. Add 4 cups water and 1 cup chicken stock. Stir and lock the lid to your Instant Pot. Set pressure cooker to 15 minutes, high pressure. Once your fava is done, release steam (fast release) and unlock your lid. Discard celery stalk and bay leaves. Stir until fava has a creamy consistency. Add salt to taste. Serve right away or leave on low setting until ready to serve.

Tip: Add salt at the end and after your fava is cooked. Add salt to taste, I added 1 tablespoon. Serve with fresh bread and Kalamata olives.
