Greek Loaded Pita Pizzas 🇬🇷🥙🤤

Fast, easy and oh so delicious. Perfect for busy weekdays and a perfect way to eat your veggies and greens. Here is how you can make it:

Ingredients
Pita breads 4-6
Marinara sauce
Shredded Mozzarella cheese

Toppings
Cherry tomatoes
Chopped baby Spinach
crumbled feta
Diced olives

Preheat the oven to 350 degrees F. Spray your pan with oil. Place the pitas side up, and place 2-3 tablespoons with marinara sauce, then top with grated mozzarella cheese. Bake for 30 minutes on the bottom rack until golden bubbly. Remove from oven and place on a wooden board.

Add your loaded toppings and drizzle with olive oil and dried oregano! Enjoy! Καλή όρεξη!

TSOUREKI
Greek Easter Bread..Save this post 🐣 This recipe is for two medium sized tsourekia. Here is how you can make it:

Ingredients
4.5 cups all purpose flour such as King Arthur
1/2 cup lukewarm water
4.5 teaspoons active dry yeast
3/4 cup sugar
Half stick butter unsalted (melted)
Pinch of salt
1/4 teaspoon ground mastic (or 1 teaspoon mastic liquor)
1/4 teaspoon ground mahlep
1/2 cup freshly squeezed orange juice
1 tablespoon orange zest
2 eggs (room temperature)
1/2 cup whole milk (warm)
1 tablespoon almond extract
1 tablespoon vanilla extract
1/4 cup olive oil
Almond slivers (optional)
Egg wash ( 1 egg and splash of milk)

Directions
Begin the starter, 1/2 cup lukewarm water and the a active dry yeast with 1 tablespoon sugar. Let rise and foam. Set aside

Add the milk and butter into a saucepan and set to low heat until the butter has melted and the milk is warm. Set aside

Using an electric mixer on low speed, add the warm milk and butter. (Must be warm, not hot) Next add the eggs and sugar. Add the orange juice, zest, almond extract , vanilla extract, mastic and mahlep. Add a pinch of salt and then add the foamy yeast starter in. Turn mixer off. Now with your hands or using a dough hook on low speed, add in the flour one cup at a time. Knead for 5 minutes. Now set aside dough to rise covered with plastic wrap or towel in a warm place. Let rise for 3 hours or until dough has doubled.
Using the 1/4 cup of olive oil grease the dough and your hands to make 6 equal dough balls. Now roll out each ball into a 9 inch strand equal in size. Combine the strands at the top of each Tsoureki and start braiding it. Tuck the bottom underneath the Tsoureki and now allow to rise for another 30 minutes. Brush with egg wash and sprinkle almond slivers. Bake at a 375 degree F oven or until golden brown about 30 minutes depending on your oven.
Serve warm or let cool and cover in plastic wrap until the day you would like to serve it!

Pro tip:
